The team behind the Redshank, serve up fantastic scottish seafood in our Food & Drink Hall. Here they tell us more about their business
1. Tell us about yourself
Jamie is Scottish, I am Irish.

2. Tell us about the history of your shop
We started with a small trailer as Jamie wanted to go back to the kitchen after a short sabbatical. So we decided to open a street food trailer with times that worked for us and our young family. We are now nearly 5 years later and we have joined the Victorian market family.

3. What is the best thing about being part of the VM?
We love the idea of independent, small, local, family businesses all working in the same location show casing the best of Scottish food, drink and craft. The food court has a great buzz and atmosphere during service with happy customers eating and drinking their way around the court and we know its just gonna get better.

4. Why should people come to your shop?
If you like local, fresh creative seafood dishes served by friendly staff were the ‘plaice’ to be. It is great to have a team that is as passionate as the owners about food and service. They enjoy creating new dishes and have the freedom to have fun with the freshest ingredients.

5. What’s the best thing about running your own business?
Where to start there as so many things – Family time, listening to customers take time to come up and say thank you that was fab or leave a review. Letting the staff know that even though it is our business they get the credit for that. To be able to make the choice of who we buy from and try and keep it as local as we possible can. To create opportunities for young staff to come in to the work place and enjoy their work . Being your own Boss 😊.
